Wanna create the ultimate sports bar atmosphere for March madness? Well your gonna need some spicy buffalo chicken to perfect your upcoming game day party. This is one of my favorite recipes because the sauce can be used for chicken wings, tenders, or even shrimp.

Ingredients: Boneless Skinless Chicken Breast
3/4 stick unsalted butter
1-2 cups All Purpose Flour
1 tsp Cayenne Pepper
1 tbsp Garlic Powder
2 tbsp Salt
1 tbsp Paprika
4 tbsp Hot Sauce, 1 egg, 1 cup milk, Vegetable Oil
1 1/2 pounds of chicken yields 3 servings.
Slice the chicken into long strips. If you want to do the traditional wings, be sure to separate the drummete from the wing, if you have no idea what I'm talking about...ask the butcher.
Make an egg wash by combining the milk and egg. Dip the chicken into the wash.
Get the flour ready by adding half of the salt, and all of the pepper and paprika.
After the chicken has soaked in the egg wash, dip a few chicken at a time in the flour. Ensure all of the chicken is coated in flour. To achieve a thick crispy breading, double dip the chicken (re-dip the chicken in the egg wash and back into the flour again). Let the coated chicken cool in the refrigerator for at least 30 minutes. Water can be used instead of egg and milk but I prefer the egg wash. Discard the left over flour and egg wash.
To make the buffalo sauce, mix the melted butter, hot sauce, and garlic. These are not too spicy but if you want it to be, just add more hot sauce to taste.
Heat the oil at medium high until it reaches 375 degrees. Be careful when placing the chicken in the oil as it may pop a little. Cook until the breading is a light golden brown and the meat is completely white. Toss the chicken in the bowl of buffalo sauce, sprinkle the remaining salt on the tenders and serve immediately with greasy fries, bleu cheese and most importantly cold beer!
For a healthier version: Don't bread the chicken in flour and bake it in the oven and instead of butter, use light blue cheese mixed with hot sauce as the buffalo mix.
