Bacon Wrapped Pork Tenderloin


Bacon is delicious, it's easy to see why so many people are crazy about it, so you can't go wrong with this recipe. Pork Tenderloin is super lean and really tender but it really needs the bacon to "step it up a notch", as Emeril would say. Cooking it on the grill is recommended but in the oven on broil would work as well. Since the Pork is so lean, don't over cook it because it will turn into jerky. Besides that, this is a simple dinner that taste like you know what you are doing.

Ingredients:
2 pounds Pork Tenderloin (8-12 ounces per person)
1 pound Bacon (About 16 ounces for every 32 ounces of Pork)
2 Tbsp. Garlic
1 Tbsp. Pepper
1 Tbs. Salt
Tooth picks (optional)
Savings: $20-30


 This is super easy. Lay the bacon out flat and wrap it around the pork like above. Continue wrapping with new slices of bacon until the pork is covered.
 With a straight edge knife, slice the pork into one inch steaks. This is the only tricky part; It helps to use a sharp knife because it won't move the bacon around. The tighter you wrapped the bacon the better chance you have of it not falling off. If this sounds troubling, just insert a tooth pick every other inch all the way through the bacon and pork and cut it between the tooth picks. Make sure the steaks are not too thick or thin because the bacon will burn before the pork is cooked or vice versa.

Grill or oven should be 400-450 degrees. Each side will only take 3-5 minutes. The bacon will easily crisp if using charcoal or wood because the flames will flare up and lick the edges of the bacon because of the grease. That is not burnt, that is actually good flavor but if it continues to flare up too much you can spread the coals around or move the pork off of the direct flames. Once it looks like above, flip the steaks one time and repeat. Baked beans and apple sauce make it a great easy spring dinner without dirtying many dishes at all. You can try flavored bacon too for some variety.
